Friday Favorites!! I haven’t looked at this recipe since I posted it back in June! I love this recipe. Super good comfort food without all the bloaty carbs and fat. Take your time making yourself a nice pot of tomato sauce that you can use all week or freeze. This is a great one for a cool fall night. I’ll be in Houston this weekend posting how I can make my trip Dukan-friendly. I’ll let you know Sat before/during/and after, the wedding we’re going to. For now…have a great start of the weekend!
Sundays used to be my days when I would have a huge pot of “Sunday Gravy” cooking on the stove. Pasta on a Sunday night is incredibly satisfying. And the sauce has to cook all day for that to happen. Well, Tom and I have to go to dinner tonight so I thought I’d get ready early today for my post and hopefully entice some of you to make this for Sunday night supper! It’s actually a really easy dish to make and doesn’t take half as much time as you might think looking at the recipe. I hope everyone has a great Sunday afternoon! SPAGHETTI WITH MEATBALLS AND SPINACH
2 packages of Tofu Shirataki angel hair noodles
4 cups of baby spinach leaves, sauteed
1 1/2 cups fat free cottage cheese
1/2 cup fat free mozzarella, shredded
1 T parmesan cheese, shredded
1 lb ground turkey
1/4 cup oat bran
1/4 cup tomato sauce
1 T Parmesan cheese
1/4 cup egg whites
2 T dried parsley
1 T dried basil
1 t minced onion
1/4 t garlic powder
1/2 t mustard powder
1 t red pepper flakes
Mix all ingredients and form 2-inch meatballs. Cook meatballs in a skillet with a bit of olive oil spray until they are done, about 10 minutes. Remove from skillet and break into large chunks.
1 28 oz can of tomato puree
1/2 small onion, chopped
1 T balsamic vinegar
2 T water
1 T dried parsley
1 t garlic powder
1 t red pepper flakes
salt and pepper
Brown onion in a bit of olive oil spray for five minutes, add the balsamic and continue for one more minute. Add all the rest of the ingredients and season with salt and pepper. Simmer for 20 minutes.
Pour 2 tablespoons of sauce on the bottom of a casserole dish. Layer half the noodles, spinach, cottage cheese, mozzarella, meatballs, then sauce. Repeat the layers and finish with Parmesan cheese. Bake at 375 for 35 minutes, let rest 10 before serving.
