Delicious recipe. One of my new favorites. I ripped the chicken off the bone and ate it with the sauce. Really yummy.
BAKED CREAMY CHICKEN
6 skinless, bone-in chicken pieces
1 cup low sodium chicken broth
juice of 1/2 lime
1/4 small onion, chopped
1/4 small pepper (your choice), chopped
6 chinese dried pepper pods
3 oz fat free cream cheese
1/4 cup cilantro, chopped
In a saute pan, brown onion and pepper for 5 minutes. Add the broth, lime juice and pepper pods and cook for another 5 minutes. Add the cream cheese and cilantro and mix well. Season chicken with sale and pepper, place it in a baking dish and pour sauce over it. Bake chicken at 375 for 45 minutes. This would be fabulous over Shirataki noodles or whole grain rice.
