I’ve been painting my fence all weekend and needed a hearty snack for paint breaks. This definitely hit the spot. I almost ate a cheeseburger last night. Thank goodness I waited to do it Dukan-worthy. Give this a try. It makes great snacks throughout the day. Or definitely a great lunch tomorrow!
BACON CHEESEBURGER QUICHE
8 eggs or 2 cups egg white substitute
1/2 lb ground sirloin
2 slices turkey bacon, chopped
2 T tomato paste
1/2 t minced onion
2 T Parmesan cheese or any other low or fat free cheese, depending on your stage
Whisk the eggs together with a quarter cup of water. Add salt and pepper and minced onion and whatever seasoning you want to have on your burger. Brown the beef with the bacon for 5 minutes, drain and add the tomato paste. Cook for another 2 minutes. Pour the eggs into a small casserole dish, drop the meat mixture on top of the eggs and press down with the back of a spoon. Top with Parmesan or any other fat free cheese you may have. Bake at 350 for about 35 minutes or until done. Cool 5 minutes before slicing or serve at room temperature.
