So, I made a variation of this a couple of days ago. This was my original version but I really wanted to have Mexican food that night so I made that one first. But this is the one I was feeling last night. All burger. I’m on Consolidation so you may want to make this with turkey. But I listed the nutritional info on the bacon bits at the bottom because they are really key to this recipe fulfilling that burger craving! They only have 25 cals per tablespoon and 1.5 grams of fat! And a tablespoon goes a LONG way! Leave the cheese off if you can’t find fat free (mine didn’t melt very well but who cares!) and use the bacon bits. With mustard, relish and some chopped onion, you’ll feel like you’re eating your favorite diner burger! Enjoy!!
BACON CHEESEBURGER PIE WITH CORNICHON RELISH
1 lb ground sirloin or turkey
1/2 small onion, diced
1/2 14 oz can diced tomatoes, drained
3/4 cup egg whites
3 T fat free cream cheese
2 t fat free greek yogurt
1/4 cup fat free sharp cheddar, shredded
2 T Real Bacon Bits
8 cornichons (make sure they are sugar free)
1/4 t Splenda
2 T onion, finely chopped
Brown onion in skillet for 5 minutes and add ground meat. Cook for another 5 minutes. Drain meat mixture, pour into a casserole dish, mix in tomatoes and season with salt and pepper. Whisk together eggs, cheese and yogurt until smooth and pour over meat mixture.
Sprinkle with cheddar and bacon bits. Bake for 20 mins at 350. While it’s baking put cornichons and splenda in a food processor and process to relish consistency. Garnish pie with mustard, relish and onion.
