I’m back on Attack this week and will be in Cruise again for the next few weeks. I slipped too much and found myself not eating my oat bran. So tonight, I was starving and needed some tasty meatballs to keep my mind off eating poorly. These did just the trick. I may have eaten a few too many, but I don’t feel guilty. I had a perfect Pure Protein day today. And it feels awesome!!
1 lb ground turkey
1/4 cup egg whites
1/4 cup oat bran
2 turkey Italian sausages, casings removed
1/2 cup fat free cottage cheese
2 T (I like spicy remember!) chili paste
1/2 small onion, chopped
1 jalapeno, seeded?? and chopped
Mix all ingredients with hands, careful not to handle too much. I made 20 pretty large meatballs and cooked them at 375 for 24 minutes (smaller takes anywhere from 18 -22 usually). Easy and delicious!
