There are quite a few options in this recipe, for Cruise, Consolidation and Stabilization phases. Seems as though many readers are now moving forward in the stages so I wanted to give all options today. This is a simple sauce and the combination of the sauce and the cucumbers is delicious on the meat. You can simply just buy chicken breasts and boil them and shred them or even more simply, but a rotisserie chicken and shred the meat. It’s very tasty though!
ASIAN SWEET AND SPICY BBQ SAUCE
2 T chili paste
1 T Splenda brown sugar blend, 2 t Splenda, 2 T honey or agave syrup
2 T soy sauce
1 T unseasoned rice wine vinegar
1 T water, 2 t olive oil
1 T tomato paste
Whisk all ingredients together over low heat until sugar has dissolved and mixture is smooth.
1 large English cucumber, sliced thinly
2 T rice wine vinegar
1/4 t Splenda or 1/2 teaspoon honey
1/2 t jalapeno, finely chopped
1 T chives, finely chopped
pinch of salt
Mix together all ingredients and refrigerate for an hour.
2 cups pulled chicken or pulled pork tenderloin
iceberg lettuce, corn tortillas
Add meat to sauce and heat until warm. Serve meat over lettuce, just in a bowl, or in tortillas. Top with pickled cucumbers.
