Yum. What could be better than a salty, thinly sliced piece of prosciutto wrapped around a big, juicy fresh grilled prawn? A Great American Grilled Bacon Cheeseburger? I love Thursday nights. It’s almost the weekend and you can stay up a bit later knowing that the workweek is almost over. I like making two apps for dinner and pouring a little diet 7up in a wine glass. Makes me feel a bit like I’m out-on-the-town. So, here are two wonderful apps to celebrate your weight loss with, that won’t bust your Pure Protein day!
PROSCIUTTO-WRAPPED PRAWNS RECIPE
1/2 lb jumbo prawns with tails, 16-20 count, deveined
3 oz prosciutto, cut into 10 strips
1 oz shaved Parmesan
12 well-soaked wooden skewers
Prepare the grill or grill pan. Wrap each prawn with prosciutto, skewer, and place seam-side down on the hot grill for for 3 minutes on each side, until shrimp has turned pink and prosciutto is crispy and brown. Sprinkle Parmesan over them and season with pepper. Serve hot!
THE GREAT AMERICAN GRILLED BACON CHEESEBURGER SKEWER RECIPE
1 lb. ground chuck
1/4 cup egg white
2T Oat Bran
2 oz 2% sharp cheddar, cut into 1/4-inch cubes
2 T real bacon bits
1 t salt
1/2 t dry minced onions
1/2 t ground pepper
8 well-soaked wooden skewers
Mix all ingredients together without handling the meat too much. Make 1 1/2-inch meat balls and place 3 on a skewer. Place the skewers on a wooden board and press lightly so the meatball flattens to 1/2-inch thick. Grill for 3-5 minutes on each side or until desired doneness. Serve with great American French’s mustard.
