This is a dish I used to make all the time. Now that I can have vegetables again I was really looking forward to getting back to some pre-Dukan dishes Tom and I used to love. And we haven’t had this one in a long time. With the angel hair I can’t even tell they’re not real noodles anymore. And I feel so much better eating this dish knowing that I’m not going to be bogged down with that heavy after-pasta feeling. And I made enough that I get to have it for lunch today too!
ANGEL HAIR WITH SAUSAGE AND VEGETABLES
2 packages Tofu Shirataki Angel Hair, rinsed and drained
1 lb hot turkey Italian sausage
1 small red onion, sliced
1 minced garlic clove
1 8 oz package of mushrooms, sliced
1 red bell pepper, diced
2 small zucchinis, halved lengthwise and sliced
1 14 oz can diced tomatoes
2 T dried parsley
1 t dried basil
1/2 t red pepper flakes
1/2 cup light or fat-free sour cream
salt and pepper
Remove casings from sausage and brown with onion, pepper and garlic for 5-10 minutes, or until meat is cooked. Add mushrooms and saute 5 more minutes. Stir in tomatoes, zucchini and pasta, cover and cook over medium-low heat for another 5 minutes. Remove from heat and stir in sour cream, season with salt and pepper and reheat over medium-low heat for 3 minutes or until hot.
