Tom’s favorite pasta is Fettuccine with Clam Sauce. And if you’ve ever tried the Tofu Shirataki noodles you can’t believe that this dish is actually not bad for your diet!
FETTUCCINE ALLA VONGOLE RECIPE (Fettuccine With Clams)
1 10 oz can of Cento baby clams
3 garlic cloves, finely chopped
1/4 cup dry white wine
1/2 t red pepper flakes
1/2 t salt
1/4 t pepper
2-4 T fresh parsley, chopped
3-4 oz clam juice
2 T finely shredded Parmesan cheese
2 packages of tofu fettuccine shirataki noodles, rinsed and drained
Pour the juice of the clams in a skillet and add the garlic. Cook for two minutes and add the wine, peppers and salt. Cook for another 2 minutes and add the parsley, clams and clam juice and heat for another 2 minutes. Add the noodles and heat for 3-5 minutes. Serve with fresh parsley and Parmesan.
