6 Dukan-Friendly Sauces for Grilled Steaks
Tom and I love to barbecue and for my birthday 2 years ago he bought me a huge drum grill. It’s the first real grill I’ve ever owned. The gas ones just can’t compete with this. So the holiday weekend is coming and I thought it might be fun to spend the day in the kitchen and create some Dukan-friendly steak sauces. Here’s what I came up with…I’m going to make the Parsley Caper Sauce tonight!
PARSLEY CAPER SAUCE RECIPE
1 1/2 cup Italian parsley
4 T thinly sliced green onions
2-4 T chicken broth
1 T capers
1 T lemon juice
1 garlic clove, chopped
1 canned anchovy fillet, chopped
Mix all ingredients in a food processor and serve over steak.
ASIAN GARLIC-GINGER SAUCE RECIPE
4 cloves of garlic, chopped
2 egg yolks
1 t lemon juice
1 1/2 t ginger, finely grated
1 T soy sauce
1 T sweetener, like Splenda
1/4 cup beef broth
Mix all ingredients in a food processor and serve over steak.
PINOT NOIR PEPPERCORN STEAK SAUCE RECIPE
4 mushrooms, sliced
1 clove of garlic, chopped
2 T black peppercorns
1/4 cup pinot noir
1 T balsamic vinegar
3 T Worcestershire sauce
olive oil spray
Cook mushrooms, garlic and peppercorns in a bit of olive oil spray. Add the rest of the ingredients, season with salt, and simmer til reduced by one-third.
ROQUEFORT SAUCE RECIPE
2 T crumbled roquefort (blue) cheese
2 T lowfat buttermilk
1/2 t Worcestershire sauce
salt and pepper
Mash the blue cheese into the buttermilk with a fork. Add the Worcestershire and season with salt and pepper.
BALSAMIC MUSTARD SAUCE RECIPE
1/4 cup balsamic vinegar
2 T Dijon mustard
Pan fry your steaks in a cast-iron skillet. Once they are cooked to desired doneness, remove them and keep warm on a plate. Add the vinegar and cook for 2 minutes until syrupy. Whisk in mustard and serve on steaks.
GARLIC AND MUSTARD SAUCE RECIPE
1 small shallot, chopped
2 cloves garlic, finely chopped
1/3 cup red wine
1/2 cup beef broth
1/2 cup fat free half and half
2 t Dijon mustard
salt and pepper
Saute the shallot and garlic in a bit of olive oil spray. Add the wine and cook for 2 minutes. Add broth and cook for another 3 minutes. Add half and half and cook for another 3 minutes. Whisk in Dijon.
