Mary Ann’s Meatballs were the runner-up recipe in the Ground Turkey Contest! And they were fabulous!! I’m making them tonight for dinner!! My judges ate so many last week I didn’t get my fill of them!
MARY ANN’S 1/2 AND 1/2 TURKEY MEATBALLS
There are tons of meatball recipes out there, this is what I came up with as my go-to favorite mixture.
1/2 lb. ground TURKEY
1/2 lb. ground Sirloin
1 egg 2 T oat bran
1 T (heaping) Dijon mustard (or horseradish mustard)
1/4 cup COTTAGE CHEESE
1-2 chopped jalapenos
2-3 T of chopped gherkins (I put both peppers and gherkins together in a food chopper) 2 T parsley
1 T Mrs.Dash Garlic & Herb
Pepper to taste
1/4 cup shredded LOW fat Colby Jack (or cheese of your choice, optional)
Make 12 golf ball sized meatballs Bake in a 350 degree oven for 40 mins. Turn over after the first 20 mins.
