Chipotle-Lime Pork Tenderloin
This was super easy and really delicious. The sauce would be good on pork chops and chicken too. Use a bit less chipotle if you don’t like it spicy. Or sweeten it a bit more. I actually grilled my tenderloin with a bunch of vegetables. Great summer dinner!!
CHIPOTLE-LIME PORK TENDERLOIN
1 t paprika (I used Hungarian sharp)
1/2 t garlic powder
1/4 t chipotle chili powder
1 t kosher salt
fresh ground pepper
olive oil spray
1 pork tenderloin
2 chipotle peppers, chopped fine with 1 T adobo sauce
1/4 cup lime juice
1/2 small onion, finely chopped
1/2 cup cilantro, chopped
1 T zero calorie brown sugar
Spray tenderloin with olive oil and season the outside with the first 5 ingredients. Set pork on a roasting pan over a foil-lined dish. Roast the pork at 500 for 20 to 25 minutes or until it registers 150 degrees. Transfer to a plate and let rest for 10 minutes.
To make the sauce, brown the onion in a small skillet. Add lime juice, sugar and chipotle peppers. Bring to a simmer over medium heat and cook for 5 minutes. Remove from heat and stir in the cilantro. Cut the pork into thin slices and serve it with the sauce.
